Our favorite Keto Recipes

LOCO MOCO
Here’s one we came up with. We love going to Maui every year, and my favorite dish is Loco Moco – but it’s FAR from Keto Friendly. Here’s a Keto-adapted version that is darned close to the comfort food version of the original.

Broccoli or Cauliflower approx 2 cups
1 Hamburger Patty (organic, grass fed)
3 Eggs
2 oz Butter (grass fed, preferrably)

Gravy:
1.5 cups of beef bone broth or bouillon
1 1/2 cup sliced mushrooms
2 large garlic cloves, minced
Dash of Braggs Aminos
1 tsp Olive oil
2 Tbsp Chia seeds (ground as fine as you can get)
1/2 tsp xantham gum

Instead of a rice bed, ‘rice’ 2 cups of broccoli or cauliflower (what works best here is a food processor with the grater attachment – like you’re grating cheese, except it’s broccoli or cauliflower – just make sure that the veggies are as dry as possible.)

Fry the eggs in the butter to the level desired, basting in butter as you go. Slightly undercooked is best.

Fry the hamburger patty in the egg drippings.

When the hamburger is done, cook the riced veggies in the egg/hamburger drippings to the level desired (do not overcook)

Take those drippings, add them to the gravy broth/bouillon. Stir the mixture on medium heat, adding the mushrooms, chia seeds and xanthum gum as the liquid heats up. As it thickens turn down the heat.

In a large bowl, add the veggies (while still hot preferrably) on the bottom, put a little gravy on them, then add the hamburger patty (add the remaining gravy, yum) and then the eggs on top. Salt and pepper to taste.
